Xylitol is a natural sweetener whose raw materials can be found in e.g. birch, maize and beech. Xylitol seems to be found in small amounts in almost all plants, especially berries and fruits. Xylitol was discovered by German and French scientists as early as the 1890s, but its harmless effect on teeth was verified in the 1970s in the so-called Turku Sugar Trials at the Department of Dentistry of the University of Turku.
Chemically, xylitol is a carbohydrate belonging to polyols, sugar alcohols. Xylitol is industrially produced mainly from birch fibre, xylan. This is why xylitol is also called birch sugar. Xylan is broken down by a chemical process into xylose, which is converted into xylitol.
Xylitol is one of the raw materials that replace sugar, such as sorbitol and maltitol. However, xylitol differs from sorbitol, maltitol and other sweeteners in that its chemical structure consists of five carbon atoms instead of six. Therefore, xylitol cannot be used by bacteria for food. Xylitol has about the same degree of sweetness as normal sugar and tastes not only sweet but also cool and refreshing.
Xylitol can prevent the growth and transmission of Streptococcus mutans, the bacteria that causes tooth decay. The bacteria cannot use xylitol as an energy source, so the tooth-damaging acid attack does not occur. In addition, the surface of the tooth is reduced in bacterial plaque and easier to clean.
